45% Pinot Noir and 55% Chardonnay, this is a magnificent Champagne from Joseph Perrier with 5g/l residual sugar. The 2012 is wonderfully elegant and aromatic with glorious minerality and structure. On the nose, notes of walnut, hazelnut and butter almond, combined with iris and acacia flowers. Hints of vanilla and spice. A lively palate with grapey, floral character. Joséphine pairs marvellously with cold dishes such as scallop carpaccio, line-caught sea bass and even smoky game dishes.
