Established in 1985 by Austrian chemist, Karl Kaiser, Inniskillin is now synonymous with incredibly high quality Icewine production. It is a remarkably difficult wine to produce, with temperatures having to reach -10°C before harvesting begins and often picking is in the dead of night. The resulting wine is immensely complex, sweet and pure-fruited, with delicious notes of peach, pear, lime juice, honey and dried tropical fruits. Though high in residual sugar (246g/L) it is wonderfully balanced by high natural acidity, leaving the palate cleansed and refreshed. It is an excellent wine to have with cheese but also apple-based desserts.
