Inniskillin Cabernet Franc Icewine Half 2016
Established in 1985 by Austrian chemist, Karl Kaiser, Inniskillin is now synonymous with incredibly high quality Icewine production. It is a remarkably difficult wine to produce, with temperatures having to reach -10°C before harvesting begins and often picking is in the dead of night. The resulting wine is immensely complex, sweet and pure-fruited, with notes of strawberry, rhubarb and raspberry. Bottled with a residual sugar level of 270g/L, it is superbly balanced by excellent natural acidity, leaving the palate cleansed and refreshed. This a lovely wine to have alongside chocolate desserts.
