This is a single-vineyard wine made from Japan’s most important autochthonous varieties, Koshu. Fermentation and maturation were undertaken in stainless steel to retain vital freshness and purity of aroma, but the wine spent 6 months on fine lees to add texture and complexity. It is elegant, delicate and ethereal with flavours of citrus, peach, acacia blossom and spice.
