Gozenshu sakes are brewed in the cold climate of Okayama, using its pristine water and the heirloom rice strain Omachi. This particular expression is a Kijoshu, a type of fortified sake where sake is added to the fermentation in one or more of its production stages. This results in a sweet, rich, juicy style of sake that is typically full-bodied and complex.
