Chaos White is made from 68% Sauvignon Blanc and 32% Semillon with a portion fermented on skins for 6 days before pressing to barrel. On the nose it offers notes of sweet pear, apricot and elderflower with hints of fennel and ginger. The palate is rich and full with tangy acidity and a peppery flourish to the finish.
