Jura, France
Domaine Jean Bourdy is one of the preeminent producers in the Jura region having cultivated vines since 1579! All Bourdy’s Savagnin grapes begin life destined to be Vin Jaune, an intensely flavoured dry white wine oxidatively aged for an extended period of time, however, some do not have the capacity to withstand the required 6-year ageing process and are bottled early as Côtes du Jura. These wines often have a tremendous ageing capacity once in bottle and often evolve to have remarkably complex and nutty flavour profiles. They often pair very well with mature cheeses such as Comté.
