Climens 2007

Château Climens is a Premier Cru Classé Sauternes from one of the leading producers of sweet wine in Bordeaux. Produced from 100% Semillon from vineyards in the Barsac appellation, Climens Sauternes is fermented in barrel and aged in barriques (30% new) for 22 months. Renowned for its elegance, finesse and profound longevity (good vintages can age well for comfortably more than 50 years), Château Climens pairs spectacularly well with Roquefort-type cheeses and foie gras. Maturer vintages complement rich but more savoury foods, including spicy Asian dishes. "A big, rich wine, showing its gorgeous fruit easily. But with a core of dryness, the ripest apricots touched by caramel, it should age well over many years.
