Omnia is Latin for “all”, and this wine is a blend of all nine of Mounir Saouma’s vineyards in Châteauneuf-du-Pape which provides a snapshot of the entire region’s terroir. A blend of 80% Grenache, 10% Syrah and 10% Mourvedre from selected old vines, it is vinified and aged in foudres, cement and 500-litre barrels, with no punching down, racking, fining or filtration, and minimal sulphur addition. From a much-underrated vintage, this is a delicious wine now nearing its peak drinking window. It is full-bodied and rich, with gorgeous notes of sweet black fruits, wild herbs, exotic spices and subtle earthy minerality.
