Château-Chalon is an appellation which is regarded as the unofficial grand cru for the famous vin jaune style of wine from the Jura region of eastern France. By appellation law it must be produced from late-harvested Savagnin grapes and then aged oxidatively for a minimum of 6 years under a layer of flor (the same method as used for Sherry). This is an exceptionally complex style of wine with an unbelievable capacity to age. Domaine Jean Bourdy is one of the preeminent producers in the region having cultivated vines since 1579!
