After 20 years as a grower and winemaker – including time at Domaine Coche-Dury – Pascal Clement established his own micro-négociant operation in 2012. His philosophy is to intervene as little as possible in the winemaking process, opting to use indigenous yeasts, allowing natural malolactic fermentation to occur and eschewing any bâtonnage during maturation.
Les Baudines is a highly acclaimed 1er Cru vineyard in Chassagne-Montrachet located at the very southern end of the commune, on the border with Santenay.
