Capreolus Quince Eau de Vie 2018

The fine fluff that covers these hand picked fruit contains an essential oil that becomes rancid after distillation. Washing by hand removes every trace of this fluff. Dry and tannic, it needs expert preparation for a slow and successful ferment that preserves its wild aromas. This takes more than one month, rushing would mean a loss of precious aroma. Following this, a gentle triple distillation. With 25kg of fruit used to make every litre the result is extraordinary. On the nose we have honey, rose water, lemon zest and peach, very floral and with a beautifull mouth filling perfume. It is pure quince without any of the cooked notes of membrillo. Fresh apples and hints of pear, rose water, lemon zest, soft spicing, white pepper, both sweet and sour, juicy with hints of drying flesh.
