This is a superb entry-level wine made by the up-and-coming Thierry Pillot at Chassagne-based Domaine Paul Pillot. It is satin-textured and layered, offering up deliciously pure notes of white peach, citrus zest and pear, with a subtle mineral streak rumbling beneath. An excellent all-occasion wine but with a level of complexity and satisfaction that belies its humble classification.
