Aligoté is a labour of love for the top producers and remains one of the best values in all of Burgundy. Grapes for this single-varietal from Domaine Paul Pillot are sourced from very old vines and picked by hand. The wine is then matured in a combination of old oak barrels and stainless steel. The result is a brightly fruited white wine, with a creamy texture and a perfect balance between richness and acidity.
