Domaine Paul Pillot is a 13-hectare estate in the heart of the Côte de Beaune now under the stewardship of dynamic 4th generation winemaker, Thierry Pillot. This is a delicious Aligoté produced from 45-year-old organically tended vines in Remigny and Chassagne-Montrachet. The 2014 is a gorgeous example of this much-maligned variety, offering up wonderful notes of citrus and white orchard fruits, punctuated by distinctive saline and stony minerality.
