Amarolo is a nod to the great Amarone wines of Italy, which are made using grapes dried on mats to concentrate their flavours. Alexander Winery winemaker Yoram Shalom applies this same technique to a blend of 40% Cabernet Sauvignon, 40% Merlot, 7% Petit Verdot, 6% Cabernet Franc, 4% Shiraz and 3% Grenache. This is an incredibly rich, round and smooth wine best served alongside equally rich foods.
