Founded in 1818 with the marriage of Nicolas François Billecart to Elisabeth Salmon, Billecart-Salmon is one of the few Champagne houses to remain family-owned, now in its 7th generation.
Most of the grapes used for winemaking come from a radius of 20 km around Epernay.
Le Clos Saint Hilaire is produced from a 1ha parcel of Pinot Noir vines and is named after the patron saint of the church in Mareuil-sur-Aÿ. Vinified in oak casks, and produced in small quantities. On the nose, a touch of biscuit, fresh roasted hazelnuts, white pepper and sweet spice together with ripe fruit character. The ample palate displays citrus and orchard fruit notes, leading to deliciously mineral finish.
