Thierry Pillot is winemaker at his family-owned Domaine Paul Pillot, but also makes wonderful wines under his own label from some of the finest parcels of Chassagne-Montrachet, Santenay and St. Aubin. A thoughtful winemaker who favours tension and crystalline purity, he often eschews more interventionist techniques and new oak to give the wines greater transparency.
His beautiful Bâtard-Montrachet comes from a plot of organically farmed vines that are over 70 years old and is fermented with indigenous yeasts before 12 months maturation in seasoned oak and 6 months in tank before bottling. The 2016 is rich, bold and intense, with incisive citrussy acidity and wonderful tensile minerality. A little austere for drinking just yet but this should develop fantastically in bottle.
