Renaud Bruyère and Adeline Houillon are a tiny producer of biodynamic wines located in the village of Pupillin, near Arbois, and farm just 4.5 hectares of vines. Produced from 100% local variety, Savagnin, this wine is made using the “ouillé” method. This denotes a different technique to that of the other regional speciality, Vin Jaune, as the barrels are “topped up” during maturation in order to minimise oxidative ageing and preserve the freshness of the wine. This is a wonderfully crystalline and complex wine that is certainly more oriented to drinking alongside food. The classic pairing would be with Comté cheese, but it would also be brilliant with shellfish, such as lobster or scallops.
