Renaud Bruyère and Adeline Houillon are a tiny producer of biodynamic wines located in the village of Pupillin, near Arbois, and farm just 4.5 hectares of vines. This is their brilliant Chardonnay which is hand-harvested from vines planted in clay-limestone soils, fermented with indigenous yeasts in old barrels and is then aged in barrel until deemed ready to bottle. It is a stunningly pure and detailed wine with remarkable mineral depth. A sublime wine when paired with the local Comté cheese or chicken roasted with black garlic.
