Committed to traditional methods and innovative techniques, it produces small-batch whiskies that celebrate the local environment and heritage. The team at Raasay operate one spirit still and one wash still, drawing water from their own borehole.\u003c\/p\u003e\u003cp\u003eTotal capacity is around 940,000 litres per year with maturation all taking place on the island. Fermentation generally takes around 90 hours, in stainless steel washbacks, and malt is lightly peated, usually 25 to 50 PPM.
